Tofu and Eggplant Stir-Fry

I’ve been eating healthy for nearly two months now, and I am always in search for new recipes to try. I came across my friend, Pao’s, vegan blog and found the recipe for Tofu and Eggplant Stir-Fry. I decided to try it today. I must say, I do like it. I did add my touch to the recipe.

Ingredients:

  • 4  Squares of Tofu cut into thin squares
  • 2 Eggplants cut into small pieces
  • Garlic
  • Onion
  • 6 tbsp Soy Sauce
  • 1 tbsp Sugar
  • 3 tsp Vinegar

What to do:

  1. Fry the tofu until golden brown.
  2. Saute garlic and onion. Add in the tofu when the onion is translucent. Set aside.
  3. Mix soy sauce, sugar, vinegar and water on a small bowl (or use barbecue sauce)
  4. Fry the eggplant until brown.
  5. Pour the sauce onto the pan, and add in the sauteed tofu. Mix well for 2-3 minutes.
  6. Done.

Serve and eat it with a cup of rice. :)

  3. Interesting dish, seems easy enough to make. I really love eggplant but I’m not so big on the tofu. I’m more of a carnivore.

  7. I’ve been a vegetarian for almost ten years and I’ve never tried tofu! Perhaps I should. I also try to eat healthy food nowadays.

  8. I’m from Louisiana, so eating anything healthy is hard Lol. I must be honest, that doesn’t look appetizing to me. Probably because I’m used to a whole lot of meats & peppers in my food :P Good luck with eating healthy though!
