I’m from Louisiana, so eating anything healthy is hard Lol. I must be honest, that doesn’t look appetizing to me. Probably because I’m used to a whole lot of meats & peppers in my food :P Good luck with eating healthy though!

Interesting dish, seems easy enough to make. I really love eggplant but I’m not so big on the tofu. I’m more of a carnivore.
